A perfect weekday salad when I’m working away and don’t have time to A. go get food B. Don’t want to make a sandwhich C. Feel like I need a detox from a weekend of debaucherous eating and drinking.
A simple salad of romaine torn up, sliced up cucumber, tomatoes and fresh goat feta. I topped it with some fresh grated pink peppercorns, loads of olive oil and sherry vinegar. Crusty bread torn up would have gone beautifully with this as well. In fact, crusty bread with some aged ham and Dijon! Yes, this is going to be my next lunch.
